It’s time for a kitchen party London! And Chef Michael Smith is back again to play host for London’s première culinary fundraising event. Get ready to get shucking at the 4th Annual Bethany’s Hope Foundation event, affectionately entitled “Chef Michael’s Kitchen Party”.

If you want to dine with a man who knows his way around the kitchen, then Chef Michael is the man to do it with. This PEI transplant is one of Canada’s best known food aficionados. He has hosted such shows as Chef Abroad, Chef at Home, Chef at Large and Chef Michael’s Kitchen. He has a passion for simple, sustainable home cooking and has plenty of award-winning cookbooks that help share his delicious recipes with the world.

And this weekend you too can sample some of his wares at the London Convention Centre (300 York St) on Saturday, April 27th, 2013. Doors open at 5 pm and the fun will go on until 1 am. It isn’t all about just the food though. Sure there will be an oyster bar where you can initiate yourself in the art of oyster shucking, but the fun only gets better from auction and silent auction will tempt your pocketbook in the name of raising money to help beat Metachromatic Leukodystrophy or MLS. Tickets are $200.

Of course, if you already have plans Saturday night, but just can’t pass up the opportunity to meet Chef Michael while he is in town, you could always go to the Meet & Greet with Chef Michael on Friday, April 26th, 2013 from 7 – 9 pm at GCW Custom Kitchens and Cabinetry (3537 White Oaks Rd). The evening also supports the Bethany’s Hope Foundation with food and drink from local restaurants to round out the evening. Tickets are $100.

If you were thinking more along the lines of staying home and taking advantage of the nice weather that is expected, I can’t blame you there. It will be an excellent weekend to tackle the last of your spring cleaning and maybe moving some of those activities outside. With 18°C expected, that is a tempting thought! Perhaps you can pull out the patio chairs and dust off the table for an outdoor kitchen party of your own. Give your barbecue a spring cleaning of its own and pick up something tasty to throw on that fresh grille. Hmm, what about … oysters!

Spicy Barbecued Oysters*


  • 3 tablespoons butter
  • 1 tablespoon finely minced garlic
  • 5 tablespoons mild chili sauce or ketchup
  • 3 tablespoons lemon juice
  • Few drops of your favorite hot sauce
  • 24 large oysters


  1. Preheat grill to medium-high.
  2. Melt butter in a small saucepan over medium heat. Add garlic and cook, stirring, until it softens, about 1 minute. Remove from heat and stir in chili sauce (or ketchup), lemon juice and hot sauce.
  3. Bring oysters along with the sauce, a cutting board, an oven mitt, tongs and an oyster knife (or other small knife) to the grill.
  4. Place oysters flat-side up on the grill rack. Close the lid and grill until the top shell pops open, 3 to 5 minutes. Transfer the oysters to the cutting board with tongs, keeping them as level as possible so the oyster “liquor” (salty seawater) doesn’t spill out.
  5. Wear the oven mitt to hold the oyster and use the knife to remove the top shell, cutting the oyster away from the top shell and leaving it in the bottom shell. Periodically wipe your knife clean. Discard the top shells. Spoon about 1 teaspoon sauce onto each oyster. Return the oysters to the grill, close the lid and grill until the sauce is bubbling, 2 to 4 minutes more. Serve with small forks.
  6. Enjoy!
